Kona Coffee Crusted Mahi Mahi*
with Tropical Fruit Salsa

Serves 6

Ingredients:
6 4-oz. mahi mahi fillets
3 T garlic, minced
Olive oil

Procedure:
Marinate mahi mahi with garlic and olive oil.

Ingredients for the coffee crust:
3 T 100% Kona instant coffee
1 t garlic salt
2 t kosher salt
1 T sugar
1 t black pepper
1/2 t red chile flakes

Procedures:
Blend well and store until ready to use.

Ingredients for the tropical fruit salsa:
1 medium tomato, diced
1 medium mango, diced
1 yellow bell pepper, diced
1 red bell pepper, diced
1 C lychee, diced
1/2 C cilantro, coarsely chopped
Juice of 1 medium lime
1/2 t li hing mui powder
1/4 t chile flakes
1/4 t salt
1/2 t cumin
1/2 t chile powder

Procedures:
Place diced fruits and vegetables in mixing bowl. Toss with remaining ingredients and chill before serving.

To Finish and Serve:
Sprinkle mahi mahi with coffee crust. Sear in pan for about 3 minutes on each side. Top with tropical fruit salsa and serve.

*Seafood Watch: recommends mahi mahi caught by pole or by trolling.
