What
I love about Turkey, is that I can make the turkey on
Monday, and try any one of these other recipes all week
long and still keep the meals interesting! My favorite
thing to do is to save the bones for that savory turkey
soup stock. The Turkey Pho soup worked out real well for
this family, and it taught me how to heat up the whole
seeds in the frying pan for a more deliciously seasoned
soup. If you are looking for new ways to add seasonings
to your dishes, lead with the Turkey Pho Soup. But even
before you make the turkey pho soup, make the turkey stock,
and with one modification, add a garnet sweet potato to
the stock for extra depth of flavor.

Basic
Turkey Stock

No matter how much you eat at the Thanksgiving table,
when all is said and done there's a mangled carcass
left behind. Instead of throwing it out, make turkey
stock. It can be used anywhere chicken stock is,
from soup to main courses.

Pho Soup
- Author Notes: Pho (pronounced "fuh") is
a traditional Vietnamese noodle soup typically made
with beef. It can also be made with chicken (which
is known as pho ga), seafood, or in this case, turkey
(definitely not traditional!). Apart from toasting
the spices (very important...don't skip this step),
this is very simple to make, particularly if you use
store-bought chicken stock. It's a little austere
with just the kale (perfect for the days after Thanksgiving
as far as I'm concerned), and you are welcome to add
additional vegetables. Traditional pho uses rice noodles
but I prefer it with cellophane (bean thread) noodles.

Turkey
Lemon and Barley Soup
- Like turkey soup but want to change things up a
bit this year with your turkey leftovers? Now here's
a detour from tradition, a riff on a classic Middle
Eastern lemon chicken soup. The strong flavor of turkey
meat holds up beautifully to the acidic lemon and
bright turmeric, cumin, and ginger spices. The addition
of barley gives the soup body. We used turkey stock
from the carcass of a roast turkey, but you could
easily use chicken stock.

Gumbo -
I know it's a little early to think about Thanksgiving
leftovers, but believe me, time goes by so crazy
fast! Once the big meal is over, even after the
late-night refrigerator raid (you sneak in and pick
at the turkey in the refrigerator too, right?!),
we'll always have more than enough leftover turkey
for Turkey Gumbo.

Stew with Root Vegetables

One of my father's favorite dishes to make in the
winter is a hearty turkey stew with lots of root vegetables
like rutabagas, turnips, and carrots. It's warming,
filling, and a big batch will last all week for several
meals of leftovers. It's also very easy on the budget,
which is probably why we had it so much growing up.
