takes Tuscan cuisine on a journey of well-being. Seasonal menus
highlight local seafood, meat and pasta dishes. Enjoy signatures

Alessandro Bocci was born on the 15th of May 1974 in a typical
village in the Tuscan-Lazio part of Maremma. His great passion
for cooking and a strong connection with the flavours of Maremman
tradition encouraged Alessandro to dedicate himself to this
profession from an early age. In fact he studied at Viterbo's
Hotel Management school and graduated in May 1990. A brilliant
and creative student, only a month after his diploma, Alessandro
was chosen by Terme di Saturnia to join the staff of Chef Giuliano
Tonini as commis chef. This marked the start of the twenty-year
association between Alessandro Bocci and Terme di Saturnia Spa
& Golf Resort, during which Alessandro drew on his experiences
with great chefs, such as his recent work with the chefs from
the Da Vittorio ***Michelin restaurant. Manager: Licinio Garavaglia

With
the well-being of its guests in mind, Terme di Saturnia bases
its award-winning cuisine on typical regional produce, often
of organic or biodynamic origin. These include wine, IGP extra-virgin
Tuscan olive oil, DOP Tuscan pecorino, honey, Maremman saffron
and Sorano beans. The variety of fruit and vegetables that the
Maremma offers include Orbetello Botargo (a method of preserving
mullet), the sratto dei Goym of Pitigliano and Sorano (a biscuit
of Jewish origin), the Maremmana breed of cattle and Tuscan
Sea Palamita (Atlantic Bonito). Direct contact with nature,
customs and traditions are the source of Maremma's finest gourmet
products. The highlights are its six DOC wines, from the famous
Morellino di Scansano to the Bianco di Pitigliano, from the
Parrina of Sovana, the Ansonica Costa dell'Argentario of Capalbio.
Morellino di Scansano, the quintessential wine of the Maremma,
is now the Tuscan wine of choice in the chicest enoteche (wine
bars) of Rome.
