Easter Recipe: Rum Kissed Lemon Meringue Pie

Nothing says Spring like Lemon Meringue pie, so after the egg hunt this Easter, wow your family and guests with this delicious dessert that's sure to brighten the day even if Mother Nature seems determined not to cooperate. Enjoy!

Rum Kissed Lemon Meringue Pie

Lemon Filling Ingredients:
4 egg yolks (reserve whites for meringue)(
1/3 cup Cornstarch
1 1/2 cups Water
1 1/3 cups Sugar
1/4 teaspoon Salt
3 tbls. Butter
1/2 cup Lemon Juice
1 tbls. finely grated Lemon Zest
1 tbls. Rave Review!(tm) Original Culinary Rum(tm)
1 (9-inch) pre-baked Pie Shell

Meringue Topping Ingredients:
4 Egg Whites
1 pinch Cream of Tartar
2 tbls. Sugar

Procedures:
1. Adjust the oven rack to the middle position.

2. Preheat oven to 375† degrees F.

Lemon Filling:
Whisk egg yolks in medium size mixing bowl and set aside.
